Week 15
Week 15 was our final exam. We were required to make and present 12 chocolate chip cookies, 6 danish pockets, and 12 eclairs. Week 14
This week was all about cake. We made three different kinds, a pound cake, a jelly roll out of a sponge cake, and chocolate fudge cakes. The pound cake was fairly simple and very tasty. Week 13
This week we did not have class due to the Thanksgiving holiday.
Week 12
Week 12 was out pizza module. We were also doing filming for a news broadcast, so the class was very different and felt a bit rushed towards the end. Week 11
Class was unfortunately cancelled this week.
Week 10
Week 10 was about bread. We made anadama bread and snowflake rolls. I had to go home early due to an unfortunate wardrobe incident and was not able to complete the class.
Week 9
Week 9 was on doughnuts and waffles. Everybody had a different item to make and I made cake doughnuts. I under mixed the dough since it was still a bit shaggy, but they came out all right. Week 8
We worked on short pastries and pate brisee. Pate Brisee is like pie dough or tart dough. It can also be used for quiches. The technique is quite similar to pie crust, but it is chilled in a disk rather than a ball. We made pastry cream again and pressed our dough into tart pans.Continue reading “Week 8”
Week 7
Week 7 was our midterm. We picked two recipes and had to make and present them in 4 hours. I picked blueberry muffins and double chocolate chip cookies. While I didn’t do as well as I would have liked, I still passed.
